H&B Kitchen: Oat and Vanilla cookies recipe

Quick and Easy is the name of the game. These cookies go down a treat.


(Doubled recipe - cut in half if preferred)
3 C flour                                                                            1 C coconut
2 t baking soda                                                                  1 1/2 C cooking oil
1 1/2 t salt                                                                         4 eggs
4 C sugar                                                                           2 T vanilla essence
3 C rolled oats

Preheat your oven to 180 degrees C
Get your cookies trays ready - I use baking paper on mine
In your bowl (I use my Kenwood) mix together all the dry ingredients.



Once combined add the oil, eggs and vanilla and mix well.



Roll the cookie dough into walnut sized balls and place on the cookie trays - consider dear mama of involving little hands to help with this step. They love it! Special memory creating times (wide smile)




Bake 10 -15 minutes.

NB* Cookies should be light brown and chewy - not crisp.
